50% Trebbiano Vecchio and 50% Malvasia .

Only the best bunches are harvested and selected by hand for the drying on racks that lasts until December/January. The soft pressing produces a very sugary must which will then be aged in small oak barrels for at least 10 years with further refinement in the bottle.

FEATURES
COLOR: Deep amber yellow.
BOUQUET: Intense aromas with hints of raisins, honey, caramel, sweet spicy, chocolate, cloves and dried fruits such as almonds and nuts, dried figs or apricots.
TASTE: Harmoniously blended, soft, intense, slightly sweet not syrupy and a good freshness in the long aftertaste.

SOMMELIER’S TIPS:

This type of wine can also be left open for years without the inconvenience of having to finish the entire bottle within a few days; years later its organoleptic characteristics will remain unchanged. Wine that goes very well with sweets , pastries or dry biscuits or to make a simple vanilla ice cream tastier. An interesting but successful pairing is with blue cheeses . I recommend serving it at 14°-16° C, especially with savory dishes, or to be enjoyed at room temperature as a glass after a meal or for meditation, perhaps with a good cigar .

A creative way to appreciate its sweetness in another guise is to create a cocktail. The Holy gin: ice, gin, tonic water, vin santo and a sprig of rosemary! Toast to health!
